Juniper berries have a pine-like, spicy, refreshing and savoury, an excellent foil for rich, gamey or fatty foods. Juniper berries are best known as the flavoring for gin and other liqueurs. Juniper berries are most often used for cooking game meat; the berries are used in a marinade or rubbed over the meat before grilling or roasting — a few juniper berries crushed & added to marinades for game gives a wonderful flavour. Use whole or crushed to soups, sauces, fish, chicken or marinades.
